Grapes: partially dried red berry grapes
Harvest: manual harvest in crates and selection of healty bunches by the beginning of October
Vinification: Natural drying of grapes in crates for about a month, followed by maceration in stainless steel tanks for 10 days at a temperature of 26/28°C. The wine is then aged in 225-litres barrels of oak for 12 months
Alcohol content: 14% ABV
Primary aromas: blackberries, spices
Tasting notes: savory, slightly tannic, full bodied, round, with a persitent and pleasant aftertaste. Excellently balanced, smooth
Serving temperature: 15-16°C / 59-60°F
Food pairing: Ideally paired with game, red meat, roast, medium and long-keeping cheeses
